    Having a toddler and a healthy living advocate in the house we go through bananas like a circus tent full of monkeys – not that eating bananas is bad.  They are a great source of potassium and really help with the soreness after working too hard at the land.

    However, eating one food to extremes can get old and I am always looking for neat new recipes.  As a beekeeper (beehaver is more accurate) I admit I am especially interested in recipes using honey so when I found this baked honey banana recipe I could not wait to try it.

    Personally, I like taking it to potluck dinners because it is “exotic” I get much more credit than the effort expended is worth.

    Here is a great recipe/technique for Camp Fire baked potatoes that would work well for camping, grilling out, or making food in a grid down SHTF scenario

    To bake a potato in a can simply:

    • Remove the entire top of a soda can. (Using you P-38 can opener gets extra points)
    • Smear the whole potato with butter or oil (and any other seasoning you like).
    • Insert the raw potato into the soda can
    • Cover top with aluminum foil and place the can onto the hot coals of your campfire.

    The Potatoes bake in the can just as they would in the oven.

    This is a great campfire recipe – especially for kids.  It is easy and takes no effort at all.  I find my boy is more likely to try new foods if he was excited about cooking them.  I did say more likely though, he will get out of bed just to crack and egg, but I can’t get him to put one in his mouth for all the sweets in the world.

    He will, however, do this.  Maybe its the excitement of cooking on a fire like a mountain man?  I don’t know, but I do know that done right so the potato gets crispy but not burnt this is one awesome tater in a can.

    If you want to make bulk hard boiled eggs, or want a simple recipe you can try baking them in the shell rather than boiling you can always use your oven to make baked hard boiled eggs.

    Simply put eggs in a cupcake pan and bake at 325-350 (depending on oven) for 30 minutes.

    When you do this, the shell will get little brown burn spots – don’t worry about it, they will disappear after the next step.

    Once you are done baking them, use tongs to put eggs in a large bowl of ice water. This stops the cooking of the egg.

    After about 10 minutes you can pull them put and peel them.

    Before you comment that it takes longer than boiling, please realize I know it takes longer, but it is easier, and I doing a lot of eggs at once it is more economical.

    Since Genny eats eggs for breakfast on her diet, this method of hard “boiling” saves her a lot of time and effort.  That makes it worth it.

    I would suggest you try these oven baked hard boiled eggs the next time you want a hard egg.  Its even something you can do with golden eggs.
