Creamy Chicken and Biscuits Casserole came from an older post on Cat-head Garlic Cheddar biscuits.  As I geared up to make those awesome biscuits I decided to just make supper and decided to try to make a casserole out of it.

The first thing is to get the stuff to make the biscuits – flour, whipping cream, garlic, and cheese.

Next I got the makings for a casserole.  I figured some chicken breasts and some cans of cream of chicken soup.

 

The “procedure” for theCreamy Chicken and Biscuits Casserole is easy:

  • Throw the chicken into a an 8 inch baking pan
  • Pour soup over the top
  • Add a little water of desired.
  • Make the biscuit dough
  • Spoon biscuit dough over the chicken mix
  • Bake at 350 degrees Fahrenheit for about 45 minutes

This is almost the same thing as the boxed casserole meals. Which is funny, considering in my bachelor years I loved buying those box casserole meals and once I married Genny she doesn’t let me make them because she doesn’t like them, but she likes this. I tried to tell her it was basically the same thing, just made from “scratch” and not out of a box, but I got the look, so I decided to shut my trap.

Cheating Chicken Pot Pie came from messing around with making mini pies.  I love chicken pot pie and I planned to make a chicken pot pie from scratch, but at the last minute I decided to cheat.

How did I cheat?  Instead of making a chicken pot pie filling from scratch, I filled the mini pies with chicken soup.

I did make the pie crust from scratch, it is just the filling that was a cheat.

Of course you can cheat even further an buy ready made pie crusts, or even whomp can pie dough.

Chicken with VinegarToday’s recipe of cooking chicken with vinegar is a pretty basic cooking skill.  This of method cooking meat “Adobo” is a cultural cooking process from the Philippines, where meat is marinated in vinegar, browned, and then simmered in the marinade. This process is worthwhile for preppers, homesteaders, or outdoorsmen to know because leftovers keep well without refrigeration because the vinegar inhibits bacteria.

In my experience it softens up tough meat, and I especially like using this process with rabbit.  As a matter of fact, I make “chicken with vinegar” far more often with rabbit more than I do with chicken.

Today we will cook some chicken with vinegar, so you can see that cooking mellows the vinegar, as well as tenderizes the meat – the end result will be about as tart as cooking chicken with tomatoes. It is actually pretty good, and I end up keeping a jug of my homemade wine vinegar near my stove so I can throw in a cup or two into my cooking whenever the wife is not looking….

Ingredients

  • 2 tablespoons olive oil
  • 1 3-pound cubed chicken
  • Salt and freshly ground black pepper
  • 1/4 cup minced shallots or scallions
  • 1 cup good red-wine vinegar
  • 1 tablespoon butter (optional)

Procedure

  1. Preheat the oven to 450 degrees.
  2. Set a large ovenproof skillet over medium-high heat. .
  3. Add oil
  4. When it is hot, place chicken in the skillet, skin side down.
  5. Cook undisturbed for about 5 minutes, or until chicken is nicely browned.
  6. Turn and cook 3 minutes on the other side. Season with salt and pepper.

Chicken zucchini poppers are a low carb, 21 day fix compliant recipe that tastes good and is easy to prepare.

This is important because ever since Genny started getting serious with the 21 day fix lifestyle she has constantly looked for ways to incorporate the foods she is supposed to eat into tasty recipes that she WANTS to eat.

I personally don’t like zucchini, but these chicken zucchini poppers are pretty good.  They also get bonus points because the boy likes them also.

Ingredients:

1 lb. ground chicken breast
2 Cups grated zucchini
2-3 sliced green onions
3-4 TBSP minced cilantro
1 Clove minced garlic
1 TSP salt
1/2 TSP pepper

Instructions:

1. Mix ground chicken and all other ingredients in large mixing bowl.

2. Spoon out 8-10 nugget sized pieces onto the a greased frying pan.

3. Cook the chicken poppers on medium heat for five minutes and then flip and repeat on other side.

4. You can eat plain or serve with your favorite dip or sauce.

These poppers were pretty easy to make, and they did not cost very much.  Once Genny started making them they kept showing up on the table on a pretty regular basis.
